Guest guest Posted February 9, 2008 Report Share Posted February 9, 2008 Cucumber and Mint Salad 3 Lebanese cucumbers, peeled and thinly sliced 8 teaspoons extra virgin olive oil 6 teaspoons freshly squeezed lemon juice 1 teaspoon orange blossom water (optional) 2 teaspoons chopped fresh mint 1. Place sliced cucumber in a colander with a weight on top and stand for 20 minutes. 2. Transfer cucumber to a bowl and mix with oil, lemon juice, orange blossom water and mint. Season with salt.
