Guest guest Posted February 9, 2008 Report Share Posted February 9, 2008 Chiva-Som Vegetarian Miso Soup 6 teaspoons miso paste 600 ml (1 1/4 pints) vegetable stock 1 small carrot 1 small daikon white radish 8 pieces fresh shiitake mushrooms 50 g (1 3/4 oz) firm tofu 2 greeb onions 1. Combine the miso paste with the vegetable stock and heat through. 2. Add the shiitake mushrooms and simmer. 3. Finely shred the white radish and carrot 4. Cut the tofu into 1 cm (3/8 " ) cubes and add with the vegetables to the simmering soup base and cook for 1 to 2 minutes only. 5. Finely shred the green onions using equal quantities of the green leaf and white bulb. Place in serving bowls. Pour the soup over the spring onions in the serving bowls and serve.
