Quick Curried Honey Pumpkin (Squash)

 

 

500 g (17 2/3 oz) butternut pumpkin (squash)

15 g (1/2 oz) vegan margarine, chopped

1 teaspoon curry powder

1/2 teaspoon honey (-OR- vegan alternative such as agave nectar)

8 teaspoons sultanas

2 teaspoons shredded coconut

 

 

1. Cut pumpkin into thin slices.

 

2. Combine margarine, curry powder, honey and sultanas in a large

shallow dish, stir in pumpkin, cover, cook in microwave on HIGH for

about 8 minutes or until pumpkin is tender; stir occasionally.

 

3. Sprinkle with coconut, cook on HIGH for 2 minutes.

 

 

Serves 4.

I'm still new to the gluten free diet. What is / are

It's okay, Diane. Don't feel badly. Kim is a wonderful co-moderator

of our group, and she lives in Australia. Just ask her how many times

I've needed a translation! Sometimes she needs one from us as well,

but she's amazingly versatile and hasn't need to ask very often. I'm

I try my best, but there's always one that will sneak by and it can

get a little confusing sometimes too :) .... I'm still struggling a

little with the tomato sauce thing (it's a condiment very similar to

ketchup here), but that's another story. LOL.

 

I'm very surprised, you don't have something called sultanas over

there? You learn something every day, don't you ... that's what I've

learnt today :) We have raisins too, but they are bigger than

sultanas. I checked foodsubs.com and they say " golden raisin =

sultana " . I'll make sure to remember that one if I make an American

recipe calling for raisins.

 

I've clarified it in the recipe in the files and added it to the

" Alternative Names " file and in the " Database " .
