Guest guest Posted February 10, 2008 Report Share Posted February 10, 2008 Quick Curried Honey Pumpkin (Squash) 500 g (17 2/3 oz) butternut pumpkin (squash) 15 g (1/2 oz) vegan margarine, chopped 1 teaspoon curry powder 1/2 teaspoon honey (-OR- vegan alternative such as agave nectar) 8 teaspoons sultanas 2 teaspoons shredded coconut 1. Cut pumpkin into thin slices. 2. Combine margarine, curry powder, honey and sultanas in a large shallow dish, stir in pumpkin, cover, cook in microwave on HIGH for about 8 minutes or until pumpkin is tender; stir occasionally. 3. I'm still struggling a little with the tomato sauce thing (it's a condiment very similar to ketchup here), but that's another story. LOL. I'm very surprised, you don't have something called sultanas over there? You learn something every day, don't you ... that's what I've learnt today We have raisins too, but they are bigger than sultanas. I checked foodsubs.com and they say " golden raisin = sultana " . I'll make sure to remember that one if I make an American recipe calling for raisins. I've clarified it in the recipe in the files and added it to the " Alternative Names " file and in the " Database " .
