Guest guest Posted February 10, 2008 Report Share Posted February 10, 2008 Grape and Apple Relish 1 kg (2 1/4 lb) black grapes 1 cup vegan dry white wine 2 cups water 3 whole cloves 8 teaspoons oil 2 medium onions, finely chopped 1 clove garlic, crushed 4 teaspoon grated fresh ginger 1 small fresh red chilli, chopped 4 medium apples, chopped 1 medium lemon, peeled, chopped 1 cup chopped dried figs 1 cup chopped raisins 1/3 cup brown sugar 1 cinnamon stick 1. Combine grapes, wine, water and cloves in saucepan. Bring to boil, reduce heat, simmer, uncovered, 10 minutes. Strain, press as much liquid as possible from grapes, reserve liquid. Discard skins. 2. Heat oil in large saucepan, add onions, garlic, ginger and chilli, cook, stirring, 1 minute. 3. Add apples, lemon, figs, raisins, sugar, cinnamon and reserved liquid, bring to boil, reduce heat, simmer 40 minutes or until as thick as desired. 3. Pour into hot sterilised jars, seal when cold.
