Guest guest Posted February 8, 2008 Report Share Posted February 8, 2008 Three Fruit Marmalade 4 large oranges 2 medium lemons 1 medium grapefruit 5 cups) water 6 cups sugar, approximately 1. Cut unpeeled fruit in half, cut halves into thin slices. Remove seeds, tie in piece of muslin. Combine fruit, muslin bag and water in bowl, cover, stand overnight. 2. Transfer mixture to large saucepan, bring to boil, simmer, covered, for about 1 hour or until find is soft; discard bag. 3. Measure fruit mixture, return to pan, add 3/4 cup sugar to each cup of fruit mixture. Stir over heat, without boiling, until sugar is dissolved. Bring to boil, boil, uncovered, without stirring, for about 40 minutes or until marmalade jells when tested. 4. Pour into hot sterilised jars; seal when cold. Makes about 7 cups.
