Guest guest Posted February 6, 2008 Report Share Posted February 6, 2008 Tropical Fruit Salad with Lime Syrup 3/4 cup sugar 1 cup water 2 cm (3/4 " ) piece fresh ginger, sliced thinly 2 stems fresh mint 2 strips lime rind 1 small red papaya, peeled, seeded, sliced thinly 2 medium mangoes, chopped coarsely 2 limes, peeled, sliced thinly 12 lychees, peeled, seeded 1. Combine sugar, measured water, ginger, mint and rind in a medium saucepan. Stir over a low heat until the sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, without stirring, for 10 minutes. Strain into a jug; cool for 10 minutes. Refrigerate, covered, until cold. 2.
