Guest guest Posted January 22, 2008 Report Share Posted January 22, 2008 Spicy Peach Salsa 2 just-ripe peaches, peeled, finely diced (-OR- use canned) 1 fresh small red chilli, seeded, very thinly sliced 1 teaspoon grated fresh ginger 1 green onion, thinly sliced diagonally 8 teaspoons lime juice 1/4 teaspoon soft brown sugar 1. Place all ingredients in a glass bowl; mix lightly to combine. 2. Allow to stand for at least 15 minutes to blend flavours. TIP: To peel peaches, place in a heatproof bowl, cover with boiling water and stand for 30 seconds; refresh in cold water, then peel.
