Guest guest Posted January 22, 2008 Report Share Posted January 22, 2008 Greek Salad on a Skewer Great idea for finicky salad eaters. 60 g (just over 2 oz) tofu fetta in cubes 8 large marinated olives 8 large cherry tomatoes, halved 1 Lebanese cucumber, cut in chunks 1/2 small red onion, cut in wedges, layers separated bottled -OR- homemade balsamic dressing, to taste 1. Thread pieces of tofu fetta with olives and veggies on 8 short bamboo skewers. 2. Place in a shallow dish; drizzle with dressing and turn to coat. 3. Let stand at room temperature until served.
