Guest guest Posted January 22, 2008 Report Share Posted January 22, 2008 Texas Salsa Salsa is tasty in warmed taco shells, topped with guacamole or vegan sour cream. 400 g (14 oz) can 4-bean mix, rinsed 31O g (11 oz) can sweet corn kernels, drained (-OR- 1 cup frozen) 2 tomatoes, finely diced 4 green onions, thinly sliced 1 long red chilli, seeded, finely diced 1/4 cup chopped coriander (cilantro) -OR- parsley 1/4 cup cooking oil 8 teaspoons lime -OR- lemon juice 1 teaspoon ground cumin pinch of sugar salt and black pepper, to taste 1. Place all ingredients in a bowl and toss lightly to combine, seasoning to taste with salt, black pepper and a pinch sugar. 2. Serve at room temperature. Serves 4.
