freezing celery

Is there a " trick " to freezing chopped celery so that when you use it, it is not

just a " watery/wimpy " consistency?

Thanks, Nichole, for the sour cream recommendation, I'll check it out.

 

 

 

As for the sugar, being diabetic, I need to limit carbohydrates fairly

 

strictly. Carbohydrates are what drives up blood glucose levels, which

 

when elevated overmuch and/or overlong, cause diabetic complications. So

 

sugars, by and large, are something I avoid except in small amounts.

 

 

 

If anyone knows of a resource for both vegan and low carbohydrate recipes,

 

would love to know!
