Hubby vegetarian for 12 or 13 now, and DS veg since birth (9.5). In November, we started gluten free/casein free diet for DS, only to discover in the process that both hubby and I are sensitive to gluten as well (which is more surprising than you think, because DS is adopted, so we have three unrelated people in one family all gluten sensitive). I've known for a long time that I am sensitive to dairy, and hubby knows he is lactose intolerant, but won't give up his milk, so I don't know if he is casein sensitive or not. At least he has cut down on it a lot, and has recently found that he loves Vita-Soy milks. We have been cooking with eggs - most of the gluten-free bread recipes that I found are pretty eggy, and I have been hesitant about substituting eggs in a gf recipe (even though I didn't have a problem doing it with wheat recipes), so I am glad to find this group. We are also avoiding corn (as much as possible) and trying to keep our soy intake down, as those are both possible culprits as well. It's been quite an overhaul to our lifestyle! I worry about using too much rice and soy ingredients and ending up sensitive to one of those. Well, there you are. I will post questions as they come up.
