Hello and Happy New Year Everyone,

 

Does anyone have experience cooking with Coconut Flour? I am so

excited to have discovered it but the problem is baking and taking

away the eggs. Apparently eggs work with the flour and if you don't

add the eggs you must add other types of flour. Then take away the

whole wheat flour and you have a real problem.

 

Any suggestions I would appreciate!

I use a quarter cup per loaf of bread mixed in with other flours.

 

I don't know about using all coconut flour. Is that what you were

looking for?

 

I also have used flax in place of eggs in the bread. I don't think

it rises quite as much but it works. I think it's 1 Tbsp flax and 3

Tbsp water to equal on egg.

yes it helps.

 

I read that to use all coconut flour you do need eggs but I will try

the flax seed and see how it goes. Maybe I could mix in brown rice

flour as well. I have used flax seed in waffles and they come out

crunchy and delicious =)
