Buttered Spinach

 

 

2 bunches (about 1.3 kg)(2 lb 14 oz) English spinach

30 g (1 oz) vegan margarine

pinch ground nutmeg

 

 

1. Remove stems from spinach. Wash spinach thoroughly and place the

wet leaves into a large saucepan. Do not add extra water.

 

2. Cover the saucepan, cook over medium heat about 3 minutes, shaking

pan occasionally, or until spinach is limp.

 

3. Drain spinach, rinse under cold water; drain.

 

4. Heat margarine in pan, add spinach and nutmeg, stir until hot.

 

 

Serves 4.
