Guest guest
Garlicky Beans with Pine Nuts 2.5 kg baby beans, trimmed 1 1/4 cups extra virgin olive oil 6 cloves garlic, sliced thinly 3/4 cup pine nuts, toasted, chopped (see Note) salt and freshly ground black pepper 1. Boil, steam or microwave beans until just tender, drain. Add beans to large bowl of iced water; drain well. Place in a large bowl. 2. Heat the oil and the garlic in a small frying pan over a low heat until the garlic just changes colour. Add the nuts and stir until heated through. 3. Drizzle the mixture over the beans, season with salt and black pepper and toss gently. Transfer to a serving dish. NOTE: The pine nuts are chopped so they will cling to the beans rather than fall to the base of the dish. NOTE: This recipe serves 50 people. The beans can be served hot or cold. This recipe can be prepared several hours ahead. Add the pine nut mixture close to serving. Serves 50.
