The manufacturer will not say that VeganRella is gluten-free because it

contains oat flour. (I checked with them.)

 

Galaxy makes a rice cheese without casein. They also make such with

casein so you have to check the label. Not so good eating by itself or

on a bare cracker. But as an ingredient in a sandwich, added to a

salad, or melted ... not too bad.

 

There are good soy cheeses without casein, or so I've heard. I can't

have soy, so the names haven't stuck in my mind.

 

I've heard good things about Parma, which is based on nutritional

yeast. Something else I can't have, so I can't tell you what I think.

 

In terms of cheese sauces, I've heard there are good recipes out there

based on either nutritional yeast or cashews.
