Galaxy makes a rice cheese without casein. They also make such with casein so you have to check the label. Not so good eating by itself or on a bare cracker. But as an ingredient in a sandwich, added to a salad, or melted ... not too bad. There are good soy cheeses without casein, or so I've heard. I can't have soy, so the names haven't stuck in my mind. I've heard good things about Parma, which is based on nutritional yeast. Something else I can't have, so I can't tell you what I think.
