Creamed Pumpkin with Maple Syrup

 

 

2 kg (4 1/2 lb) pumpkin (-OR- butternut squash/pumpkin)

olive oil

salt and pepper, to taste

8 tsp maple syrup

8 tsp chopped parsley

 

 

1. Preheat oven to 200 C (400 F).

 

2. Peel pumpkin and cut into pieces. Toss with a little oil and season

to taste with salt and pepper. Place on tray and bake for 40 minutes

or until soft.

 

3. Roughly mash pumpkin and stir in maple syrup and parsley. Adjust

seasoning if desired. Serve.
