Guest guest Posted November 29, 2007 Report Share Posted November 29, 2007 Golden Roast Potatoes 1 to 1 1/2 potatoes per person olive oil fresh rosemary -OR- thyme, finely chopped salt 1. Preheat oven to 200 C (400 F). 2. Peel potatoes and cut each one in half. 3. Place cut side down onto chopping board and lay a thick skewer or chopstick along each side. Using a sharp knife make a series of slices from top to bottom, close together, almost to the bottom. The skewer will prevent the knife from cutting all the way through. 4. Pat dry and arrange in a roasting pan lined with non-stick baking paper. Brush well with olive oil and sprinkle with salt and fresh rosemary or thyme. 5.
