Guest guest Posted November 25, 2007 Report Share Posted November 25, 2007 Oven-Poached Winter Fruits 1 medium lemon 3/4 cup water 1 cup orange juice 1/4 cup vegan dry white wine 1 1/4 cups sugar 1 cinnamon stick 3 cardamom pods 1 medium quince 1 medium nashi pear 1 medium pear 1 medium apple 3 fresh figs, quartered 1. Using a vegetable peeler, peel rind thinly from lemon, cut rind into fine shreds. 2. Combine rind, water, juice, wine, sugar, cinnamon and cardamom in pan, stir over heat, without boiling, until sugar is dissolved. 3. Bring to boil, simmer 1 minute. 4. Peel, quarter, core and slice quince, place in large shallow ovenproof dish. 5. Pour sugar mixture over quince, bake, covered, at 180 C (350 F) for 1 1/2 hours. 6. Peel, quarter and core pears and apple. Add to quince in dish, coat in syrup, bake, covered, further 30 minutes. 7. Transfer fruit mixture to bowl, add figs, cover, cool.
