Guest guest Posted November 25, 2007 Report Share Posted November 25, 2007 Spicy Nut Mix 1 1/4 cups Brazil nuts 8 teaspoons olive oil 6 teaspoons ground hot paprika 2 teaspoons ground cinnamon 1 teaspoon ground aniseed 1/4 teaspoon salt 1 1/3 cups unsalted cashews, toasted 2 cups pecans, toasted 1. Place Brazil nuts on oven tray, toast in oven at 180 C (350 F) for about 10 minutes; cool. Rub off skins, using a tea-towel. 2. Heat oil in pan, add spices and salt, stir over low heat until fragrant. 3. Add all the nuts, cook, stirring, until nuts are coated in spices and mixture is dry. 4. Place nut mixture in single layer on trays; cool. TIP: Recipe can be made a month ahead. Store in an airtight container. Makes about 4 1/2 cups. Serves 10 or more.
