Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Vanilla Fruit Salad 1/2 cup caster (siperfine granulated) sugar 1 vanilla pod 3 peaches -OR- nectarines, sliced 1/2 rockmelon 1/4 watermelon 125 g (4 1/2 oz) blueberries 375 g (13 oz) strawberries 125 g (4 1/2 oz) fresh cherries, pitted 1. Place sugar into a small saucepan and add 1/2 cup water. Cut pod in half lengthways, scrape out seeds; add to pan. Stir over low heat, without boiling, until sugar dissolves. Bring to boil, reduce heat slightly and simmer for 5 minutes. Transfer to a jug to cool. 2. Cut melon into chunks or use a melon ba1ler. 3. Combine all fruit in a shallow dish. Pour syrup over.
