Guest guest Posted November 19, 2007 Report Share Posted November 19, 2007 I knew we had some, it just took a bit of looking Sprouted Lentil Salad Vegan Nutrition: Pure and Simple by Michael Klaper, M.D. 4 cups sprouted lentils 2 carrots, grated 1/4 cup onion, diced 1/4 cup parsley, chopped 2 Tbsp (30 ml) oil 1/4 cup water 1/4 cup lemon juice, fresh 1 Tbsp (3 tsp) Bragg Liquid Aminos (or GF soy sauce) 1 Tbsp (3 tsp) rice syrup 3 Tbsp (9 tsp) nutritional (savoury) yeast 1. In a bowl, mix together sprouted lentils, carrots, diced onion, and fresh parsley. 2. In a blender, blend the remaining ingredients. Pour over the vegetables and mix. Chill and serve. Nutritious and delicious! 4 - 5 servings. --------------------- Sprouted Lentil Amaranth Soup 1 onion, chopped 2 cloves garlic, minced 1 tsp celery seeds 1 tsp thyme pinch of tarragon 3 Tbsp (45 ml) tomato paste 4 cups vegetable broth 1 cup precooked amaranth -OR- 2 Tbsp (6 tsp) dry grain 2 medium carrots, sliced 3 cups sprouted lentils Saute the onion and garlic for a minute and then add the spices, tomato paste, vegetable broth, Amaranth, and carrots. Bring to a boil, add lentils, and lower heat, cooking for 4 minutes or until the dry amaranth is done. ----------------------- Steamed Lentil Sprouts Source: Total Health 3 cups lentil sprouts (1 cup dry lentils) 1/2 cup chopped onion 2 cloved fresh minced garlic, optional 2 Tbsp (30 ml) GF soy sauce 6 Tbsp (90 ml) water Steam all ingredients in covered skillet until sprouts are crispy-tender (6 to 10 minutes). How to serve? Great for breakfast as a side dish, or steamed with summer vegetables for a quick main meal entree. Delicious over brown basmati rice. Serves 6.
