Guest guest Posted November 16, 2007 Report Share Posted November 16, 2007 Nutty Fruit Salad Source: previously posted to Christian Vegan Cooking 1 (8 oz.) can crushed pineapple 1 cup peeled, shredded carrots 1/2 cup chopped apples 1/2 cup chopped pears 1/2 cup peanuts* 1/4 cup raisins 1/3 cup plain soy yogurt 2 tablespoons peanut butter* In a medium bowl, stir together the first 6 ingredients. In another bowl, blend together the soy yogurt and peanut butter. Add the yogurt " dressing " to the salad and stir to coat. *can substitute almond butter and almonds.
