Guest guest Posted November 3, 2007 Report Share Posted November 3, 2007 Spiral Pasta & Bean Salad 200 g (7 oz) GF spiral pasta 3 teaspoons olive oil 250 g (9 oz) cherry tomatoes, halved 420 g (15 oz) can 4-bean mix, rinsed 1 avocado, diced 3 green onions, sliced 1/4 cup toasted sunflower seeds 1/3 cup sweet chilli sauce 1 tablespoon (4 tsp) balsamic vinegar 2 cups roughly chopped butter lettuce 1. Cook pasta as packet directs until tender, but still firm to the bite. Drain well; place in a large bowl. Add 1 teaspoon oil and toss to coat. Cool. 2. Add tomato, beans, avocado, onion and seeds and toss to combine. 3. Whisk remaining oil with chilli sauce and vinegar; drizzle over salad and toss to combine. Gently fold in lettuce and serve.
