Guest guest Posted November 3, 2007 Report Share Posted November 3, 2007 Peach Salsa 1/2 small red onion, finely diced 420 g (15 oz) can peaches in natural juice, drained (reserve juice), diced 1 Lebanese cucumber, halved, seeded, finely diced 1 long red chilli, seeded, slivered lime juice, to taste Place onion, peaches, cucumber and chilli in a bowl. Season to taste with lime juice and lightly toss to combine. ALTERNATIVE: Instead of canned peaches, try fresh nectarines, plums, peaches or mangoes.
