Guest guest Posted November 3, 2007 Report Share Posted November 3, 2007 Avocado Salsa 3 large ripe tomatoes, diced 1 firm-ripe avocado, diced 125 g (4 1/2 oz) can sweet corn kernels, drained 1/2 small red onion, diced 1/2 bunch coriander (cilantro), roughly chopped lime juice, to taste Place all ingredients in a bowl; season with lime juice, salt and black pepper to taste. Using a fork, lightly mix to combine. SERVING SUGGESTIONS: Makes a wonderful dip for corn chips. Good as a side salad.
