Warm Fruit Salad Kebabs with Honey

 

 

1/4 cup clear honey (-OR- vegan alternative such as agave nectar)

1/2 tsp ground cinnamon

1/2 pineapple, peeled cut into 2 cm (3/4 " ) pieces

1/4 paw paw (papaya) -OR- rockmelon (canteloupe) peeled cut into 2

cm (3/4 " ) pieces

2 kiwi fruit, peeled, cut crosswise into 4 slices

2 cups watermelon, cut into 2 cm (3/4 " ) pieces

1 banana, cut into 1 cm ( 3/8 " ) slices

1/4 cup small mint leaves

extra mint leaves, to garnish ( optional)

lemon-lime -OR- fruit sorbet, to serve (optional

 

 

1. Preheat a barbeque or char-grill to mderate.

 

2. Combine honey (or alternative) and cinnamon in a small bowl.

 

3. Thread fruit onto skewers, placing a mint leaf after every few

pieces of fruit.

 

4. Brush skewers with honey mixture.

 

5. Cook skewers, brushing with more honey mixture and turning once,

for 1 minute or until warm. Garnish with mint and serve with sorbet.

 

 

 

NOTE: You don't have to cook these; serve them fresh if you like,

drizzled with honey and cinnamon.

 

 

 

Seves 4 (8 skewers).
