Guest guest Posted November 2, 2007 Report Share Posted November 2, 2007 Lentil Croquettes Source: 3ABN (adapted to gf) 1 med. onion, finely minced 2 Tbsp. olive oil 1 sweet red pepper, finely chopped 3 cloves garlic, crushed 1 c. cooked red or brown lentils 1 tsp. chili powder 1 tsp. cumin 2 tsp. lemon juice 1/2 c. crushed roasted peanuts 1 c. plain breadcrumbs, gluten free salt to taste Spicy Flour Mixture: 1 c. plain bread crumbs, gluten free 2 tsp. turmeric 2 tsp. chili powder 1. Sauté onions in olive oil until clear, then add the red pepper and minced garlic. Sauté until peppers are tender. Remove from heat. 2. Place all ingredients in a mixing bowl, adding only enough flour so that mixture will hold together. 3. With floured hands, shape mixture into ovals. Set aside. 4. Stir together the spicy flour mixture and place in a separate bowl. 5. Take croquettes and roll in spicy flour mixture, coating them completely. 6. Heat olive oil in a large skillet. Add the floured croquettes, in batches, and cook for about 10 minutes, turning once, until crispy on each side. 7. Sprinkle with salt to taste. Serve hot. Yields: 10 - 3 inch croquettes * These are crispy on the outside and soft and tender on the inside. They are not supposed to be firm. These are wonderful with wild rice as a side dish.
