Guest guest Posted November 2, 2007 Report Share Posted November 2, 2007 Holiday Wild Rice Blend Source: 3ABN (adapted to gf) 4 c. wild rice blend, cooked 3 Tbsp. olive oil 1 c. green peppers, diced 1 c. banana peppers, chopped 1 c. red peppers, diced 1 c. fresh spinach, chopped 1 med. onion, chopped 1/4 c. pimentos, diced 1 Tbsp. McKay’s chicken-style seasoning 1 Tbsp. dried parsley 2 tsp. garlic powder 1 tsp. sea salt 1. Cook wild rice according to package instructions. Set aside. 2. In a large skillet, heat oil and sauté onion. Add vegetables one at a time, stirring well. Sauté until tender. 3. Stir in wild rice and mix well. Remove skillet from heat and add garlic powder, salt and chicken-style seasoning. Lightly toss mixture, using a fork. 4. Add diced pimentos and return to heat, simmer for about 3 more minutes.
