Grilled Mango with Honey Sesame Ice-Cream

 

 

4 mangoes, cheeks removed

2 cups vegan vanilla ice cream, softened

4 teaspoons sesame seeds, toasted

2 teaspoons honey (-OR- vegan alternative)

1 teaspoon finely-grated lime rind

 

 

1. Preheat grill/broiler on high.

 

2. Using a sharp knife, score mango cheeks in a criss-cross pattern

(don't cut all the way through). Place, cut-side up, on grill/broiler

tray. Grill/broil for 3 to 5 minutes or until warmed.

 

3. Meanwhile, place ice-cream in a large bowl. Fold in sesame seeds,

honey (or alternative) and lime rind. Serve mango cheeks with

ice-cream mixture.

 

 

Serves 4.
