Guest guest Posted October 9, 2007 Report Share Posted October 9, 2007 Orange Almond Salad 2/3 cup olive oil 1/2 cup sugar* 1/2 cup lemon juice 2 tsp. poppy seeds 1/2 tsp. salt 1 tsp. prepared mustard (gluten free) 2 cups romaine lettuce, chopped 2 cups baby spinach 1/2 cup slivered almonds, oven toasted 1/2 cup pineapple bits 1/2 cup mandarin orange pieces 1 Tbsp. scallions, chopped 1 medium avocado, peeled and cubed Combine olive oil, sugar, lemon juice, poppy seeds, salt, and mustard together and blend with a wire whisk. Place in fridge to chill. In a large salad bowl, combine remaining ingredients. Before serving, drizzle with salad dressing. Garnish as desired. *May substitute stevia or other alternative sweetener.
