Guest guest Posted October 9, 2007 Report Share Posted October 9, 2007 Almond Broccoli Salad 1 cup broccoli florets, chopped 1 cup tomatoes, diced 1/2 cup black olives, whole 2 Tbsp. sliced almonds Dill dressing For the dill dressing: 1 Tbsp. Vegenaise 1 Tbsp. vegan sour cream (Tofutti) 1 Tbsp. water, cold 1/4 tsp. lemon-dill zest (Vegetarian Express brand if available) 1/4 tsp. all-purpose vegetable salt Mix all the salad ingredients (except the dill dressing) together in a glass bowl. Set aside. Prepare dressing in a blender, whizzing until creamy and smooth. Place the dressing in a small pitcher and set by the salad for individuals to add to their portion of salad.
