Guest guest Posted September 28, 2007 Report Share Posted September 28, 2007 Greek Green Beans 2 1/2 lbs (1.15 kg) fresh green beans 1 cup olive oil 1 to 2 cloves garlic, chopped 2 onions, sliced thin 1 1/2 lbs (680 g) tomatoes, chopped 3 tablespoons (9 tsp) parsley, chopped 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon black pepper (-OR- more, to taste) 1. Wash beans and break them in half or slice them lengthwise. 2. Place in a large pot of cold water. 3. Heat the oil in a large skillet and saute the onions until soft and translucent. 4. Drain green beans and add to the skillet. 5. Add the rest of the ingredients. 6. Cover and simmer over moderate heat for about 1/2 hour. Serves 6.
