Crock Pot Spicy Orange Sweet Potatoes

 

2 lb. sweet potatoes, peeled and diced

1/2 cup packed brown sugar

1 tsp. cinnamon

1/2 tsp. ground nutmeg

1/2 tsp. grated orange peel

Juice of 1 medium orange

1/4 tsp. salt

1 tsp. vanilla extract

 

Garnish:

Chopped toasted pecans, optional

 

Place all ingredients in a crock pot/slow cooker.

 

Cover and cook on LOW heat setting for 4 hours or on HIGH heat setting

for 2 hours or until potatoes are tender.

 

Sprinkle with pecans before serving, if desired.

 

Serves: 8.
