I'm craving white chili and regular chili. I recently learned that chili doesn't need meat. I need help learning how to modify the recipes I have. I know I can leave the meat out. But my problem is the other ingredients. In the past, I've used canned kidney beans, tomatoes, great white northern beans, canned salsa, etc. I am no longer able to use canned goods because of the way they are processed. It doesn't matter if it's organic or not. I do know what how to make fresh salsa and how to cook tomatoes down. Can someone tell me how to make chili or white chili with dried beans? How do I make it moist? Every time I cook with dried beans, everything is dried out and tastes disgusting (even if I use the amount of water called for). Thanks in advance.
