We don't test out as celiac, but he has Crohn's and can't eat it, and I don't know why it makes me sick, but it does. Also, I have been wanting to go vegan for years, and just felt overwhelmed with my limited schedule and limited grocery options (no health food store to speak of......at least not that I have found, yet. I don't know that I am afraid I will miss anything, but time is precious with work, college, hubby, sons (one who is special needs and on a really restricted diet) and several pets. I find cooking for me is one thing, but trying to cook for everyone........phew! I'm working something out with DH so that he is in charge of the meat. I do the rest. We shall see. After the end of Sept, I won't be working anymore, just college. I was a vegetarian in my twenties but that was a long time ago. I find it is just too easy to go back to old eating habits when life gets stressful.
