Guest guest Posted August 25, 2007 Report Share Posted August 25, 2007 I hope this doesn't sound too dumb, but does anyone have any tips or suggestions (other than marking the date on a freezer bag)for freezing things like " Tofu Cutlets " or if you make the jelly/jam recipes that were sent to the group a while back, how long do they keep? Freezing can intensify or diminish flavor, and change texture. But most foods freeze well for 3-6 months, some such as jams freeze fine for up to a year. A big key is good packaging. Use containers intended for freezing. Tofu is an example of a food that changes texture when frozen. It becomes more porous and chewier. But that can be a good thing, as it takes on the flavors of a marinade more readily. If you're not sure how something will freeze, you can try freezing a sample of it for a couple of days then defrost it and check it. Heather Heather Reseck, R.D., C.D.
