Roasted Peppers & Wild Rice

 

 

1 1/4 cups wild rice blend

200 g (7 oz) fire-roasted marinated red pepper strips, thinly sliced

4 tsp vegetable oil

1/4 cup loosely packed fresh coriander (cilantro) leaves

 

 

1. Cook the rice in a large saucepan of salted boiling water following

packet directions or until tender. Drain well and return to the pan.

 

2. Add the peppers, oil and coriander and stir until well combined.

 

 

Serves 4.
