Guest guest Posted August 14, 2007 Report Share Posted August 14, 2007 Spicy Red Lentil & Tomato Soup olive oil spray 1 large onion, chopped 3 tsp ground cumin 1 tsp crushed garlic, optional 1 to 2 tsp chopped chilli, plus extra to serve 2 large gourmet tomatoes, chopped 1 cup cooked red lentils soy cream, to serve coriander (cilantro) leaves, to serve 1. Heat a large heavy-based saucepan over medium heat. Spray the base with a little olive oil and add onion. Saute for 3 to 4 minutes or until the onion is lightly browned. 2. Add the cumin, garlic and chilli and cook for 1 to 2 minutes. Add the tomatoes and the red lentils. Stir to combine. 3. Pour in the stock and bring to the boil, stirring often so the lentils don't stick to the base of the pan. Reduce the heat to low, and simmer uncovered for 30 to 40 minutes, or until the lentils are soft. Ladle into serving bowls. Drizzle with extra chilli and soy cream.
