Pasta Bake

This is from the latest issue of Orgran Everyday Health. Each issue

has a section with vegan recipes. For those not in Australia, the

http://www.orgran.com/ ). If you can't get Orgran Gravy mix use 2 1/4

cups of your favourite gravy or a white or " cheese " sauce.

 

 

1 packet Orgran Rice Pasta

1 cup dried shitake mushrooms

1 celery stick, chopped

1 carrot, chopped

1 small head of broccoli

2 onions, sliced

1/4 cup Orgran Gravy mix

2 cups water

seasoning

2 tbsp (8 tsp) olive oil

 

Topping:

 

2 cups Orgran Crumbs (-OR- dry GF bread crumbs)

1 cup Orgran Plain Flour (I used 1/2 cup each brown rice and chickpea)

1 cup chopped parsley

3 cloves garlic

1/3 cup olive oil

1 1/2 to 2 cups water

seasoning (optional)

 

 

1. Wash then soak dried mushrooms in boiling water for 1/2 an hour.

Drain and keep the water.

 

2. Lightly steam the carrot, broccoli and celery. Cook your pasta

according to instructions then drain and set aside.

 

3. Place the cooked pasta and vegetables in a large bowl and set aside

while you prepare the gravy.

 

4. In a medium saucepan heat 2 tbsp (8 tsp) olive oil. Add the sliced

onions and allow to cook on low until very soft and juicy.

 

5. Stir the gravy mix into the 2 cups of water or alternatively use

the excess water from the mushrooms for this. Add to the onions

stirring all the time until this is thickened and brought to the boil.

Take off the heat and add to your pasta nad vegetables. Season to taste.

 

6. Stir everything together well and leave to sit while you prepare

the topping.

 

 

Topping:

 

1. Place the crumbs, flour and any seasoning in a bowl and rub through

the olive oil. Stir in the parsley and the crushed garlic and mix well.

 

2. Stir in the 1 1/2 cups of water initially and only use the extra

water if the topping is too dry. Allow to sit for a few minutes.

 

3. Place your vegetables in a lasagne dish and then crumble the

topping on top. When it is covered press topping lightly for a smooth

finish.

 

4. Bake in a pre-heated 180 C (350 F) oven for 20 to 25 minutes.
