Vegan Artichoke Bean Dip

one 14 ounce (400 g) can artichoke hearts, drained

one 15 ounce (425 g) can navy (haricot) beans -OR- pinto beans, drained

8 ounces (225 g) vegan cream cheese

1/4 to 1/2 cup vegan mayonnaise

nutritional yeast

2 cloves garlic (-OR- more to taste)

1 tablespoon (3 tsp) lemon juice

1 dash hot sauce

1 teaspoon sage

salt & pepper

spinach (optional)

scallions (green onions) (optional)

vegan parmesan cheese (optional)

 

 

1. Blend all ingredients together, adding artichoke hearts last (or

just chop them finely and add, depending on the texture you want).

 

2. Put in a glass baking dish (pie dish works great).

 

3. Sprinkle the top with nutritional yeast, or veggie parmesan.

 

4. Bake at 300 F (150 C) for 45 minutes, or until completely warmed

through.
