Guest guest Posted July 31, 2007 Report Share Posted July 31, 2007 Maple-Glazed Tomatoes 750 g (26 1/2 oz) truss cherry tomatoes olive oil cooking spray pinch caster (superfine granulated) sugar Maple Glaze 1/2 cup maple syrup 1/4 cup red wine vinegar 1/2 red onion, thinly sliced 1. Preheat oven to 180 C (350 C). 2. Lightly grease a large roasting pan. Place tomatoes in pan. Spray lightly with oil. Season with salt and pepper. Sprinkle with sugar. Roast for 10 to 15 minutes or until skins start to wrinkle but tomatoes still hold their shape. 3. Make maple glaze Meanwhile, combine maple syrup, vinegar and onion in a small saucepan over medium heat. Bring to the boil. Boil gently, uncovered, for 15 minutes or until mixture is thick and syrupy. Strain syrup into a jug. Set aside to cool. 4. Transfer tomatoes to a platter. Pour over maple glaze. Season with pepper.
