Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 Mustardy Baked Potatoes with Olives 6 large potatoes 1/3 cup olive oil 1 medium onion, finely chopped 2 cloves garlic, crushed 2 teaspoons black mustard seeds 2 teaspoons dry mustard 4 teaspoons dried Italian herbs 1/2 cup sliced black olives 1. Cut potatoes into 2 cm (3/4 " ) pieces. 2. Heat oil in large baking dish, add potatoes, onion, garlic, mustard seeds, dry mustard and herbs; stir overheat until combined. 3. Bake, uncovered, at 190 C (375 F) for 30 minutes. 4. Stir in olives, bake further 30 minutes, uncovered, or until potatoes are browned and crisp. Serves 6. I didn't have any mustard seeds so I threw in a few generous spoonuls of dijon mustard and sprinkled it all with some salt and pepper. This recipe is definitely a keeper.
