Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 Pasta with Okra, Tomatoes and Olives 2 tablespoons (8 tsp) oil 150 g (1 medium) onion, chopped 2 cloves garlic, crushed 820 g (29 oz) canned tomatoes 2 tablespoons (8 tsp) tomato paste 1 cup vegetable stock 2 tablespoons (8 tsp) chopped fresh marjoram 1/2 cup sliced black olives 1 teaspoon sugar 300 g (10 1/2 oz) small okra 400 g (14 oz) GF penne pasta 1. Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. 2. Add undrained crushed tomatoes, paste, stock, marjoram, olives and sugar; simmer, uncovered, until slightly thickened. 3. Add okra, simmer, 5 minutes or until okra are tender. 4.
