Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 Corn Relish 4 medium cobs fresh corn 2 1/4 cups white vinegar 3/4 cup sugar 1 medium onion, chopped 1 small green capsicum (bell pepper), chopped 1 small red capsicum (bell pepper), chopped 2 tablespoons (8 tsp) cornflour (cornstarch) 4 tsp dry mustard 4 tsp seeded mustard 1/4 cup white vinegar, extra 1. Cut kernels from corn cobs, using sharp knife. 2. Combine vinegar and sugar in large saucepan, stir constantly over heat without boiling until sugar is dissolved. 3. Bring to the boil, add corn, onion and capsicum, cover, reduce heat, simmer 20 minutes (or microwave on HIGH for 8 minutes). 4. Blend cornflour with mustards and extra vinegar, stir into corn mixture, stir constantly over heat (or microwave on HIGH for 3 minutes) or until mixture boils and thickens. 5.
