Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 Fresh Tomato Salsa 2 tomatoes, finely diced 1 Lebanese cucumber, peeled, finely diced 125 g (4 1/2 oz) can sweet corn kernels, drained 2 tablespoons (8 tsp) finely diced red onion 2 tablespoons (8 tsp) finely chopped coriander (cilantro) squeeze lime -OR- lemon juice, to taste Place tomato, cucumber, corn, union and coriander in a bowl. Season with juice, salt and black pepper to taste. Mix to combine. Serve at once. SERVING SUGGESTION: Combine with sliced avocado and alfalfa sprouts on wholemeal GF grain bread for a scrumptious sandwich. NOTE: Drain excess juice from diced tomato before mixing.
