I included eggplant and it made a nice addition. Having it sit for a few hours before eating softens the noodles. A tomato is another nice addition too. It is not as time consuming as it sounds, remember no cooking. And it is so good for you. I am Creamy MAC NUT AND NOT CHEESE ALFREDO SAUCE serves 2 FOR THE SAUCE 1 cup macadamia nuts (do not soak, you can buy online in bulk) 1/2 cup almond or brazil but milk 2 Tablespoons chopped scallion 1/2 teaspoon chopped garlic 3/4 teaspoon of salt (celtic salt, or himalayan salt) 1/4 teaspoon of nutmeg 1/4 teaspoon white pepper Blend all ingredients for sauce until creamy. Taste and adjust seasonings if necessary. Serve with I Am Flowing veggie noodles and let this luxurious sauce dance over your favorite types and shapes of vegetable noodle. I am Youthful LIVE NUT AND SEED MILKS makes 6 cups Almonds, brazil nuts, hazelnuts, and hemp seeds all make great milks. You can also use sunflower seeds. Presoak almonds in fresh water for 12 hours; drain, rinse, and recover with fresh water at least once. You do not need to soak hazelnuts, or brazil nuts, as they do not contain enzyme inhibitors. You can soak sunflower seeds, and they can be sprouted too. Don't over do it. Put your nuts in a fine colander, or nut milk bag. Drain out all the liquid, and you have it, nut milk. For sweetness blend with a date or two. You can make shred them using a shredder, or food processor is the easiest. You can cut buy hand, making various shapes, like matchsticks etc. You can buy a spiralizer which makes flowing noodles, but I have heard that it is diffucult to use. Toss the noodles with a pinch of salt and olive oil to soften.
