Fast Pasta

 

 

If you like pasta, try this quick recipe.

 

 

300 g (10 1/2 oz) long GF pasta eg. spaghetti, fettucine

1 red onion, chopped finely

1 red capsicum (bell pepper), sliced thinly

125 g (4 1/2 oz) baby English spinach leaves

4 tomatoes, chopped

12 black olives

2 tablespoons (8 tsp) garlic-flavoured olive oil

salt

freshly ground black pepper

 

 

 

1. Add the pasta to a large pan of boiling salted water, boil,

uncovered, according to directions on the packet until " al dente " .

This is Italian for " to the tooth " , that is tender but firm to bite.

 

2. Drain the pasta and place it in a warmed serving bowl, add the

remaining ingredients and toss gently. Serve immediately.

 

 

Serves 2.

Cooking: 15 mins.
