Guest guest Posted June 28, 2007 Report Share Posted June 28, 2007 Thai-Style Mashed Potato 4 medium (800 g)(28 oz) old potatoes 40 g (1 1/2 oz) vegan margarine 60 ml (1/4 cup) coconut cream 1 teaspoon sugar Thai Seasoning: 4 tsp vegetable oil 1 small (80 g)(3 oz) onion, chopped 1 clove garlic, crushed 1 small chopped fresh chilli 1 teaspoon grated fresh ginger 4 tsp chopped fresh coriander (cilantro) 1. Peel potatoes and cut each into 4 even pieces. 2. Boil, steam or microwave potatoes until tender. 3. While potatoes are boing make Thai Seasoning: Heat oil in pan, add onion, garlic, chilli and ginger, cook, stirring, until onion is soft. 4. Drain potatoes, mash well with potato masher or fork, or push potato through a sieve. 5. Add margarine, coconut cream and sugar, beat until margarine is melted. 6.
