Guest guest Posted June 27, 2007 Report Share Posted June 27, 2007 Lentil Patties with Ratatouille Recipe Source: www.masterfoods.com.au ---------------------------- Preparation Time: 15 minutes Cooking Time: 20 minutes ---------------------------- 400 g (14 oz) canned lentils 2 cups mashed potatoes 1 tbsp (4 tsp) MASTERFOODS oregano leaves 1 egg replaced (binder) (see " Egg Subs " folder) 1 pinch MASTERFOODS salt & pepper, to taste 1/4 cup olive oil 2 tsp MASTERFOODS Freshly Crushed Garlic 1 eggplant, diced 1 zucchini, diced 2 tomatoes, diced 1. Place lentils, potato, oregano, egg and salt and pepper in a bowl and mix well. Form into 12 patties and set aside. 2. Heat 1 tablespoon (4 tsp) of the olive oil in a large frying pan. Add garlic, eggplant and zucchini and cook over high heat for 5 minutes. Add tomatoes and cook for a further 5 minutes or until softened. Season with salt and pepper. Remove from pan. 3. Heat remaining oil in the pan and when hot add patties and cook for 2 to 3 minutes each side or until golden. Serve hot with ratatouille. Serves 4.
