Hi All,

 

I thought I'd make my son a treat for lunch today - a " Subway " roll.

 

I made 2 " foot-long " rolls using my " Besan Bread " recipe. I used the

breadmaker on the dough setting. Once risen, I placed it into a French

stick pan, shaping it into two long rolls. Using a knife I cut shallow

slits crosswise along the top of the rolls with a knife, brushed them

with agave nectar (mixed with a little water), sprinkled with oregano

and soy parmesan and baked them in the oven for about 25 minutes.

 

In the meantime, I made some vegan " Fried Chicken " , shaping it into

long narrow strips (like a long roll shape). I found a recipe on

Recipezaar for a Subway sweet onion sauce clone, so whipped that up too.

 

Once cooked and cooled a little, I sliced the rolls open (leaving one

side still joined), topped with lettuce, tomato, cucumber, carrot, red

onion, sliced olives, the " Fried Chicken " , some Sweet Onion Sauce and

finally some soy cheese. Using some baking paper (parchment), I

wrapped them tightly and served them up. (This was the easiest way of

keeping it all together. To eat the rolls we just rolled back the

paper package a little.)

 

After all this I got one very big hug from one very satisfied son :)

.... and, yes, I probably wouldn't get a job at Subway or as a food

stylist or photographer, but it sure did taste good.
